Founder of the Légumerie, Claire hails from the north-west coast of Ireland and has been engaged in creative vegan cooking for more than 20 years. She has a master’s degree in food security and is an advocate for sustainable, plant-based eating. She lives in France where she hosts cooking demonstrations and runs a vegan café vélo with her partner.
