Vegan barbecues are set to be all the rage this summer, with every barbecue in the know serving up a sensational selection of plant-based options – and what better way to liven up a summer barbecue than with the Encona Sauces range?

Ingredients
Method
Put the sweet potatoes in a pan of cold, salted water and place on a high heat. Once boiling, reduce the heat to a simmer and cook for 15 minutes or until soft. Drain the potatoes and mash until smooth. Set aside to cool.
Add the garlic, spring onions, coriander, Encona West Indian Extra Hot Pepper Sauce, brown sugar, allspice, salt and pepper to the mashed sweet potatoes. Mix all the ingredients together until combined. Shape 10 patties out of the mixture and dust each patty in the mashed potato flakes.
Place a frying pan on a medium heat and add the oil to the pan. Fry the sweet potato patties for 3-4 minutes on each side. Serve immediately.
